Lots of it is in plants because it is one of the basic materials needed for growth. Keep collecting ashes from fires of woods and then run water through a barrel of the ash. Will end up with potassiem lye. KOH.
Leach water through a pile of manure and you will get potassium nitrate. This indicates that plants use potassium to make basic building blocks.
